 红蟳/Oil Baked Scylla Serrata

      州的一道名菜原料以晋江石湖红膏母蟳为最佳。其制法特殊要将活蟳泡在高梁酒中浸醉笼上猪网油置花生油中加热焗熟切块拼盘复如整蟳状。观之红光油亮,食之鲜嫩喷香,保持着红焗原味,且因红艳艳的闪烁油亮,可为佳节良辰增添吉祥、喜庆的气氛,很受人们喜欢。

 

It is a famous dish in Quanzhou, and its best raw ingredient must be scylla serrata from Shihu, Jinjiang. The Oil Baked Scylla Serrata looks glossily red, tastes fresh and delicious with original flavour. Because of its brilliant red color, it is considered to bring a lucky and festive atmosphere during festivals or auspicious events.
